The mix-beans consists of:
1.Rovitsa or rouvitsa Kalamatiani! The cultivation of Rovitsa in Greece dates back to prehistoric times and started again a few years ago as a "response" to the demand of the time for more and more Mediterranean products.
The rovitsa is prepared without the need for soaking. We find it as a food cooked as a soup or as a salad with enough onion, oregano and lemon that enhance its taste!
Small seeds, green and shiny, do not resemble anyone else in taste while their growing conditions act as a shield to protect their nutrients!
2. Red lentils! Red lentils are also known as "Egyptian lentils". Its taste is softer than that of common lentils, it is much more digestible and light, sweeter and has a nutty aftertaste.
3. Lentil or Black or else "the lentil caviar"! Apart from the color, the fact that these lentils remain grainy even after cooking makes them impressive. They are characterized by their special taste as well as by their property to be more easily digestible than other lentils (brown, yellow, green, red).
4.Brown Lentil: The genuine Greek lentil, in its purest and most boiling form! Its origin is Argos Orestiko and keeps intact all its nutrients as its production is small and pure!
