Smari comes to us from the picturesque Kalamavka, one of the most beautiful villages of Mountainous Crete. Pine honey is collected from the pine forests located in the mountains of Kalamavka Ierapetra. It is approximately 65% of the total honey production in Greece and comes from the honeydew secretions of the insect Marchalina hellenica (known as "Cotton", "Worker"), when it parasitizes in Halepio and Trachea pine. The aromatic, famous, Cretan thyme is also collected from the same forests.
This is excellent quality pine thyme honey that keeps its quality at high levels as it is a completely natural product. Its color is darker than thyme but lighter than pine honey.
Its crystallization takes place at a rather slow rate due to the low natural content of glucose in pine honey. More specifically, it crystallizes after 24 months.
