Herring is the fatty fish that together with other game fish of their species move in large flocks. It belongs to the genus Clupea and is found mainly in the shallow and warm waters of the North Pacific and the North Atlantic Ocean and the Baltic. Reaches the age of 20 to 25 years.
It is found in many local recipes as raw, after fermentation as pickled or aged. Smoked herring, however, is at the top of the taste!
