Salt, which along with olive oil claims the title of "gold" of the earth, historically has its roots in its birth, almost synchronized with the birth of the human species. "YOU are the salt of the earth," Jesus said to his disciples . (Matthew 5:13). In Chinese papyrus, in 2700 BC. we find the first recipe for salt while in historical reports we learn that the Egyptians used it as a basic ingredient for embalming the dead. The Romans, in their exchange society, used it as a salary for the legionnaires, using the word sal they coined from an anagram of the word alas (<salt, salt). Thus came the English word "salary" and the word ("sales").

In the Greek area, in Messolonghi it has two salt pans near its lagoon, the largest known to the locals as the "White" salt pan and capable of producing 50-80% of the salt produced in Greece.
