THALLON CUCUMBER OIL COLLECTION METHOD
The olives are harvested by hand in mid-October in order that do not injure the wrist and they are processed the same or at most the next day. During this time and after the unsuitable fruits are removed, the green olives are placed in perforated crates. They are transported to the ecological olive mill and washed with drinking water. The oil is extracted only by mechanical methods, at a very low temperature and without any addition of water!
